Pancakes. Red velvet pancakes. I’m somewhat fascinated by these pretty red cakes, and eat them whenever I can. I trekked up to the Autry Farmer’s Market at Griffith Park when I heard The Buttermilk Truck was going to be there debuting their new Red Velvet Pancake Mix. I arrived early and found people already in line with 15 minutes before the truck was set to open their doors! The wait was totally worth it. I made some new friends in line, including a young lady who has created The Great Food Chase and was in LA following the trendiest food trucks.
I of course purchased a couple cans of the Pancake Mix to try them at home. And then I placed my order for red velvet pancakes and enjoyed them with a flat white from Longshot Coffee, which had set up near The Buttermilk Truck. These decadent pancakes not only look pretty, but taste good too. Light and fluffy with a hint of cocoa and red-velvety goodness! And topped with a scoop of cream cheese butter, mmm good. These Red Velvet Pancakes are being declared My Best Bite of the Week!
