Peanut Butter and Jelly. Such a simple combination that brings to mind carrying brown bag lunches to school. In fact statistics say that the average American student has eaten 2,500 of these sandwiches by the time they graduate high school. Nowadays you can find the peanut butter and jelly combination in a number of baked items. One of my favorites is the PB & J cupcake offered by SusieCakes Bakery as their May cupcake of the month. Imagine my dismay when I walked into the shop on May 29 only to be told they had already moved on to the June cupcake of the month. I know I know, how can I get so sad about a cupcake? Well, the way Susie crafts those two flavors into a cupcake form is like a piece of delicious art.
Just a few days later I walked into CAKE Bakeshop in Manhattan Beach and sitting front and center was this adorable Peanut Butter & Jelly thumbprint cookie. I got a chance to meet and chat with owner Laura and, after selecting a variety of items including sweet and savory scones and a gluten-free item for a tour guest, I was sure to get myself one of her PB & J cookies. The cookie was just the right amount of peanut taste and SO moist. The dollop of jelly was sweet and a perfect finishing touch. CAKE’s motto is “We Bake-You Eat” and they made me very happy in light of my earlier cupcake disappointment. Thanks to this awesome little PB & J cookie for being my best bite of the week!
