The Best Bite I Ate This Week: Grilled Cheese

This wasn’t your usual grilled cheese sandwich. This was a Grilled Cheese with Short Rib sandwich, created by Chef Eric Greenspan at The Foundry on Melrose. My girlfriends Heidi and Becky and I had gone there to enjoy the much-talked-about “Flights and Bites” wine and food pairing. The ladies seated next to us were so happy with their meal (one of them is in culinary school) that they leaned over to tell us that we must order the grilled cheese. So we did.

Served on a raisin-walnut bread with an apricot puree and melted taleggio cheese, this was a heavenly bite. Good thing there were 4 pieces on the plate, so we each got a piece with a little left-over to share. Besides the awesome meal, the evening was even more special when Chef Greenspan walked by our table and stayed about 10 minutes to chat. I told him how much my Pancake Club loved his Pancake Lasagne, and he told us that his new Grilled Cheese restaurant was opening in the neighborhood soon. This is one talented (and friendly) chef and I’m happy to declare his Grilled Cheese with Short Ribs my best bite of the week!
